Supper Tips from a Mennonite Housewife
Tired from a long day of cleaning and caring for your children and house? 6pm and no idea what to have for supper? No need to despair. With a little bit of creativity, you'll have some tasty supper laid out in no time.
1. Take out some hot dog wieners, pour water over them, pry them apart and soak them in warm or room temperature water for a few minutes. Cut up some sweet peppers, onions, and tomatoes. Saute them in a pan with a bit of oil on high fire, then cut up some wieners and dump them in the pan. Let cook on high for a bit, then add water and tomato sauce or ketchup until wiener pieces are floating in the liquid. Let it simmer for about 5 min. Serve with rice, tortillas or bread.
2. Cut up some wieners and fry them together with scrambled eggs. Get some sliced bread and presto, you have egg sandwiches.
3. Heat up a comal or pancake griddle. Roast the wieners on it. Roll them up in a flour tortilla spread with cheesewiz or mayonaisse and bingo, a hot dog burrito is in your hands.
You can also substitute bologna for wieners in the above tips.
4. Don't like mixing dough for flour tortillas or heating up frozen tortillas? Take some time during the week, make a big batch of dough balls, rub them all over with a very light layer of vegetable oil, and pile them up inside an airtight plastic container. Keep them in the fridge until whenever you need them. It works best if you take them out of the fridge about 30 minutes before you will make them.
5. Boil some eggs until hard. Peel them and chop them up. Also chop some sweet peppers, a bit of onion, and sprinkle in some cilantro. Mix everything together with salad cream or mayonaise. Makes a great salad to go with any dish.
6. Buy a bag of sliced bread and a pack of refried beans. Shred some cheese. Spread the bread with the beans and sprinkle the cheese on top.
